With nearly three decades of experience behind the stove, Chef Sanjay Singh is a culinary force whose journey began in the vibrant, spice-scented streets of Delhi. A graduate with a three-year culinary diploma, Sanjay refined his craft within the prestigious Taj Group of Hotels, India’s gold standard for luxury and authentic hospitality.
Chef Sanjay’s career is a roadmap of excellence, spanning from the ultra-luxury corridors of The Grand Hotel in Delhi to the high-stakes kitchens of Manhattan’s elite, including the renowned Tamarind Tribeca and Tamarind on 22nd Street. His expertise isn't limited to the dining room; he has mastered the precision of logistics as a chef for premier airline caterers like Gate Gourmet and 121 Inflight, and most recently served the Long Island community as the Chef and Co-owner of Mahal in Roslyn Heights.
Now, Chef Sanjay brings his lifelong dedication to Masala Delight in Great Neck. Here, he blends the soul of authentic Indian heritage with modern fusion innovations, creating a menu that is both a tribute to his roots and a playground for his creativity.

To understand Chef Sanjay’s cooking, one must taste his signature 1947 Style Butter Chicken. Inspired by the original recipes born in the Daryaganj neighborhood of Delhi, this dish eschews modern shortcuts.
It is a labor of love featuring succulent tandoor-roasted chicken simmered in a velvet-smooth tomato gravy, enriched with hand-churned butter and a precise balance of dried fenugreek. It is not just a meal; it is a time capsule of flavor—smoky, tangy, and unapologetically authentic.
